Mexican-born Michelin-starred chef Carlos Gaytan serves “American Dream Live” cuisine at Chicago’s restaurant Tzuco.

Chicago (WLS)-It was exactly 30 years ago that a young aspiring chef from Mexico came to Chicago with only his backpack and dreams.

“I had a clear dream, but I didn’t know it would happen. This is beyond my dreams,” said Carlos Gaytan.

Fast forward, Carlos Gaytan is now the chef owner of Tzuco in the city’s Gold Coast district, and the cuisine blends his Mexican tradition with a French twist.

“They aren’t going to find traditional food, they’re not going to find enchiladas, they’re not going to find tacos,” Gaytan said. “But they will find tortillas, they will find really interesting dishes.”

Gaytan was born in a small town called Witzko near Acapulco and incorporated it into the name of the restaurant. And it was in the mountains of Witzko that Gaytan first found his love for food.

“My dad took me to hunt. Most of the time it was for meat. We weren’t playing sports so we were preparing animals when we were outdoors. It was my dad. I was the only one in the mountains .. It was just great, “said Gaytan.

In the kitchen, it was his mom who encouraged Gaytan to think outside the box.

“My mom, she was always really creative. Maybe she didn’t have the money to go to the market and make one recipe. Instead, she went to the fields to pick all the ingredients and together I was cooking. It’s a great job, “he said.

In fact, Tzuco’s best-selling dish is his mom, Cochinita Pibil, a deliciously marinated pulled pork. Gaytan guarantees that all his food is approved by his mom.
“She comes to the kitchen and walks around trying out food. I think she’s okay with this. I like it,” said Gaytan.

As the owner of Mexican, which was closed in Westtown in 2013, Gaytan was the first Mexican-born chef to win the coveted Michelin star. But it has never been so easy.

“One of the things people are unaware of is that they are no longer afraid of things because everything can happen. When they really want, work hard, and sacrifice a lot, they become reality. That’s the reality, “said Gaytan.

It’s so real that people from all over the world come to Tsuko to taste his food.

“I’m honored to be here in Chicago and share everything I know with people. They’re not just the locals. Now we have to stop,” said Gaytan.

In addition to Tsuko, Gaytan owns a restaurant “Ha” in Mexico and is on the verge of opening a third restaurant in California.
